Stone and Skillet

 When I awoke at 1 pm a check for $5000 was in the door. Yay! 

When the rewiring is done, we will get two new bathrooms, we are painting house inside and getting new or more kitchen cabinets. I hope he will totally replace them. Then, we will have ducts cleaned! 

I hate the kitchen floor. Hopefully, I can get a new one. Maybe the paneling in kitchen and dining area can go. I hate paneling. Oh, we need new indoor doors. I will tackle this one thing at a time.

Finally, at 8 am, I went to sleep. My legs finally were warm enough. I was tired still when I awoke,  but no brain fog. Tuesday was weird. 

Tommy was procrastinating about making appointments--lawyer for Trust and surgeon for hip replacement. After a month, I made both appointments today.

Thursday, I bought STONE and SKILLET English Muffins. They were delicious. On Friday, I found mold on them one day before their expiration date. I returned them and bought another package. I froze those one at a time. Today, I bought two more flavors, looked down and saw I was eating mold! Those will go back tomorrow. These are new to Publix. However, check the date carefully. 

Has anyone had these English Muffins?

  1. I'm so glad to hear you got your deposit back! I was worried that electrician was going to give you and Tommy a hard time about it.

    Moldy muffins are not great. It's bad enough to bite into one, but even more annoying to schlep back to the store to get a refund.

    I am making more chicken stock today because why not? Using the crock pot again means it's zero work on my part. Nothing but delicious smells all day! :^)

    Here's an easy but delicious recipe for you and Tommy to try:

    Onion Chicken Thighs & Rice
    • 1 Tbs butter + 1 Tbs olive or avocado oil
    • 1 onion, chopped
    • 1 Tbs butter + 1 Tbs olive or avocado oil
    • 6 chicken thighs (boneless & skinless)
    • One 1-oz pkg Lipton onion soup mix
    • 1 cup basmati or jasmine rice (or any long grain white), rinsed and drained
    • 2 C chicken stock
    • 3 Tbs sour cream (or heavy cream or cream cheese)
    • 1/2 tsp black pepper
    • 1 large handful baby spinach leaves (optional)

    1. In a large (at least 10.5 inches) frying pan with a lid, saute onions in butter & oil over med heat. When cooked through (approx. 7 min), remove to a large dish and set aside.

    2. Place the onion soup mix into a large, sealable plastic bag. Add the chicken thighs and shake well to coat.

    3. Add the 2nd portion of butter & oil to the same pan and return to med. heat. Add 3 or 4 thighs to the pan and sear for 3 min on each side. Remove thighs to dish with onions, and sear remaining thighs in the same fashion.

    4. In the same pan, add the rice and stir for 1 minute. Add the stock, sour cream, & pepper and bring to a simmer (3-4 min).

    5. Add the thighs and onion (and spinach, if using) back to the pan, nestling the thighs so they are well mostly covered. Cover with the lid and simmer on Low for 20-25 min. Check the rice to ensure it has cooked through before serving.

    1. He did not hesitate. I was surprised, too. Remember, this is second trip to return the muffins!
      That recipe sounds good except for the thighs.

    2. You can use skinless, boneless breasts, too. If they are very large, cut them in half, so they are about the size of a thigh.

    3. Yes, I understand you don't eat thighs. Use chicken breast instead. I promise you'll love it!

      He has done nothing about upkeep since 1980 on a home built in 1950s. They were not happy the English muffins went bad.
