Get $1.99/lb. Chicken Tenderloins

Aldi has Family Packs, 3-5 lb. average weight packages of chicken tenderloins. This sale starts Wednesday.

I baked the chicken thighs in the oven with potatoes, carrots, onion, and garlic. I now have 9 meals of chicken for Tommy. Plus another 6 meals of potatoes and carrots, three for each of us. Two large Granny Smith apples were chopped and put into the batter of a spice cake. YUM!

Now, I need to figure out what to do with 20 lbs. Red Delicious apples. They are my favorite apples, but I can never eat that many before they go off.

I did not get anything else planted today. The Better Boy tomato plants had to be brought in since they have gotten so leggy they make their 2 inch square containers fall over and they had almost crispy leaves.  Everything did get watered that was on the front porch.

Did you plant anything today? Cook great food?

  1. When I found cooked hamburger the other day, I also found a large portion of cooked chicken. That became chicken ala king instead of grilling.

      I love chicken a la king! Tommy does not have a grill, so that is never an option. He hates chicken a la king but I may make some for me. Sounds delicious.

  2. Sound like you were productive in the kitchen. :) When I have a ton of apples to use up I make crockpot applesauce. Peel the apples, cut them into quarters, throw them into crockpot with maybe 1/4 cup water. Cook on high for 3-3.5 hours. Mash when done. You can add sugar or cinnamon to them when cooking too. I typically don't as my kids eat enough sugar.

      I thought of applesauce but not the crockpot. I would not add sugar for me, either. I suppose that is what I will do. I know they would not be good in a pie. We don't need pie, either.

  3. I made a chicken bacon ranch casserole using chicken thighs. I took the skin off first and laid them out on parchment paper lined cookie sheet to bake. Fried chicken skins is a favorite treat. Sort of like a pork rind, but thinner and crispier. Cooked the chicken thighs in bacon grease in a skillet to brown them, then put them in the casserole dish and covered with partially cooked bacon, homemade ranch dressing and shredded cheese. Baked until done.

  4. Going to make a big crock pot of chili. Brown the hamburger and get everything ready today and tomorrow morning I put it all in the crock pot and have a few days worth of meals

  6. I almost always buy chicken thighs or breasts with the skin on. I like it roasted until the skin is crisp. Just seasoned with some salt and either sweet marjoram or poultry seasoning, or a little curry powder. Once in a while thighs in a casserole with rice, cheddar cheese soup, cheddar cheese and broccoli. I also like to put bbq sauce on thighs and make oven bbq. It doesn't taste as good as on the grill but when it's hot (95 degrees) in the summer or it's winter we use our imagination and pretend it's almost as good as it would have been on the grill.

    I tried to think of something to do with so many apples. I thought of one thing my Mom used to do was to make fried apples for dessert sometimes. It was pretty quick to do. I don't know for sure what she put in them, but they were sliced and I assume she added some sugar and fried them in butter. They got brown and were like they were caramel coated. We just ate them like that, but some Reddi whip would sure have been good on them.

    Maybe if you can peel them, he can slice them. Do you have a good vegetable peeler? That might make it easier for him to peel apples, potatoes, carrots..

    Your description made me salivate! I think I need to make chicken, rice soup, cheese, and broccoli in the oven. Will Red Delicious apples make good fried apples? I thought they would go to mush. Well, it could be great tasting applesauce. He cannot peel anything with any dexterity or speed. Yes, I have a vegetable peeler and a knife. He does not want to cut himself.
