Since I drank the last of my milk on Thursday, I was so hungry for milk by the time we went to get it Friday about 6 pm. I love milk. I was surprised Tommy found bananas for me. Usually, bananas are gone this close to a holiday with people making banana pudding.
I told him I would make him Jello with fruit cocktail. He was happy. I am going to make Jello with Cool Whip, cottage cheese, and pineapple for me. He will hate the cottage cheese.
For dinner we ate one of the meatloaves. Tommy said he wanted carrots and peas. I ate a whole can of green beans. This time, I soaked them for about an hour to remove much of the sodium.
We both wanted to watch Dateline, but we accidentally took a nap! Since we only slept about 45 minutes, we were able to see the rest. We had been waiting to see this episode.
On Saturday, I will make the potato salad, two versions, one for each of us. I suppose I will use one of the boiled eggs to make a deviled egg for me. And, I will open a can of green beans, much better for us than green bean casserole.
Friday, Tommy worked on his state and federal taxes, finishing after a few hours. His taxes are sort of complicated. Well, he does not think they are. I do, more complicated than a simple tax return. So, that is mailed and he awaits a check from state and feds.
It is too bad it will rain on Saturday and Easter, spoiling the egg hunts for children.

Just don't tell him about the cottage cheese, he may not notice. I like it just out of the container, don't have to add anything to it. I am glad you are making the deviled eggs just for you. If there is something that that Tommy likes I would make it just for him.

DeleteHe probably will notice it, but I am offering him some. His special is he gets peas. He likes most everything except eggs in any form, gravy and bananas.
He does not like gravy? The whole idea of cooking is to make a tasty gravy. I could not make mashed potatoes without gravy. It was a rule of my husband's. LOL My son's favorite breakfast is sausage gravy over biscuits.

DeleteHe says gravy makes him bloat. Plus, his face breaks out in a greasy, greasy layer of yuckiness. I have seen this and it is weird. He has to take a napking and wipe it off. He said I could say this just now. Well, he hates sausage gravy, too! I know, it is weird.
The grand kids went to a Easter egg hunt this morning. If it had been yesterday the wind would have cancelled it. Kind of neat they drop the eggs by helicopter..something to remember.

It's been a day in the kitchen, puttering around. Washing/stemming strawberries, making salmon salad from last night's leftover broiled salmon, making more lime jello with canned pears, doing dishes, wiping down counters, etc.
ReplyDeleteI don't think I could eat jello with cottage cheese. I enjoy them both, just at a safe distance from one another.
I have all my side dishes ready for cooking tomorrow: roasted asparagus, roasted sugar snap peas, orange glazed carrots and rolls. Now I just need a main course! DD bought lamb on sale and has a frozen duck. If she doesn't text me soon that she is making one or the other I am going to bake chicken breast with a mustard/cream sauce.
Huh. Now DD says she is going to make lamb curry with homemade naan. Alrighty then! Nope, now she's going to slow-roast it with rosemary. Pick a lane, darlin'--pick a lane! Actually, it doesn't really matter since I won't be cooking it. Never cooked lamb in my life. Tried it, hated it. I'll have salmon salad. ;^) ;^)

I have to make things over several days in order to have more than one dish. It all sounds good except lamb. Like you, I cannot stand lamb at all. She makes decisions like I do, changing her mind quick and often. Salmon salad sounds good.

I think the cottage cheese would be much less noticeable if it were smoother and not curded. Like ricotta. I'll be you could sneak ricotta past Tommy, Linda!

Sounds like you have everything planned for your Easter dinner. Good, simple foods, just the way I like things to be. Had my dad decided to come for dinner, I had planned a small ham, potato salad, roasted asparagus and apple pie. He has decided to have dinner at the assisted living where he lives. He feels bad for the people who don't have family that can take them out or even visitors of any kind, so he will stay there, dine with them, and try to get them to engage in some kind of conversation. I will be visiting him later in the day and will be making something else for our dinner later on. No need for all the food I planned, thinking he was coming over, so will come up with something easy for us. Maybe get around to making the potato salad later in the week. Reading about you making it is what got me thinking about it. Hope you have a lovely Easter. Ranee (MN)

DeleteYour planned dinner sounds great. It is so kind that your father decided to stay with the people who are bereft of friends or family. He knows he can see you anytime. I rarely have potato salad because Tommy does not like eggs in it and has so many requirements beyond no eggs, I just usually don't make it because I would feel I had to cook something else nice for him. Thank you. I think Easter will be great for us. I hope you Easter is nice, too.
Tommy & I have the same taste in food. I like my potato salad the way he does, won't touch cottage cheese & I absolutely love carrots & peas. I cook my carrots with stick cinnamon, then add a can of peas and add a bit of butter after draining the water and removing cinnamon. So good! Happy Easter to you both!

I think ricotta cheese is very good. It only has a little bit of texture to it. One brand that we were getting, mostly for Fuzzy, sometimes I had a few spoons full, was very smooth and fresh tasting. Fuzzy didn't have many teeth left and the only type of cottage cheese around here had fairly large curd. They used to have a choice between large,and small curd, but the store we go to just had fairly large curd,but not labeled as such. The curd of the cottage cheese would sometimes go down Fuzzy's throat the wrong way and make him cough, but he loved his ricotta cheese and ate quite a bit of it, for how small he was. It has a very good amount of protein in it, there are low or high fat varieties of it,too. I always disliked the weird feeling the curds of cottage cheese made on my teeth when I ate it.

He is a lucky dog to get cottage cheese. Daisy is the best brand and has fewer ingredients. I have never felt it on my teeth...lol.
