Remember the pants that dumped my phone on the road as I got out of the car? The ones I have still do it. It is so frustrating. The other day, I was digging around looking for something. I came upon a small, squishy bag among hard items and wondered what it was. Well, apparently it is two more pair of the same pants bought over a year ago. The tags were still on, but the receipt is long gone.
Aren't I lucky? Not so much. These two are the same as the pair that stays filled with pills and dumped my phone. The pants fit well, are soft, stretchy but do not look like knit pants. So, I decided to keep wearing the pill-y pair. They are good enough for this Pig. I will not wear the others one moment other than out to someplace where I want to look nice, like to the doctor. No wearing them while I sit here.
This afternoon, well, about 6 pm, we went out. With the light lasting so long, it is hard to think of it as evening. So, I guess we went out this evening and bought water, bananas, PAM bogo, and Cheerios bogo. I decided I wanted Special K Original. By the time we got home around 7 pm, I would rather have died than cooked or dealt with dinner. But, I gave myself a talking-to and got up and headed to the kitchen.
In the freezer was a package of two chicken legs and another package of two chicken tenders. I thawed the legs for Tommy. He had chicken, corn on the cob, and sweet potato. He was happy. I had Special K with bananas sliced on it and milk. I finished dinner with the two chicken tenders. Right now, I will have apple.
If I double up on vegetables tomorrow, does that count?
For nights like these when I have no ambition or when I am sick or we have been gone all day and I am tired, having frozen protein is a lifesaver. He could have had salad or opened a can of peas. Now, the leftover, refrigerated vegetables are gone. Tomorrow, I will probably bake carrots, potatoes, onions and zucchini for dinner. That will be enough vegetables to last at least three days, maybe more.
Cucumber sandwiches, at least the ones I make, are one of my favorite party foods. I took them for about twenty years to my friends Christmas Open House. One year, people stopped me between the front door and the table to get one "before they disappear." I had them in a gold wire sleigh and covered with Glad Wrap. People who knew me knew what I had brought, so wanted them immediately.
I suppose with the festivities in England, cucumber sandwiches are my celebration over here. These won't have the bread cut in circles like I usually cut the bread, but they will be delicious. The European cucumbers were given to me, and the cream cheese was here already, bought when it was on sale a few months ago.
These sandwiches were a hit at a ninth-grade tea party for my class. The boys took the sandwiches in the palm of their hand like their hands were claws. They had no manners or finesse, but it was sort of cute. Thankfully, I had made dozens since I knew they were young, hungry kids. Maybe it was our old-fashioned picnic where we had these. This was a class outdoors on the grass with blankets. We did study poetry, not just skip class. The meanest, rudest, and most recalcitrant boys cooperated. Feed them home-made cookies everyday and they shut up long enough to learn. Yes, they did learn while eating.
Now, Tommy tells me he hates cucumber sandwiches, and Lynda hate cucumbers, rather, cucumbers hate her. So, I have lots of sandwiches if I use even one of the four cucumbers. Of course, I really hate cucumbers, but these European ones grown in Mexico are different somehow, and I don't know how. But, the European cucumbers don't make me violently ill.
We recycle and take the items to Publix. The newspapers are the problem. I want to read the newspaper every day. When I was ill several times, I missed days of reading. They were stacked for me to finish. It took me three days to get them all ready to add to our recycling bag. Somehow, Tommy put in papers in the stack for me to read, papers I had read. But, they are ready and a place on the shelf is empty. Things get done slowly some days.
Recipe: 8 ounces cream cheese, 1 package Good Seasons Italian Dressing Mix (powdered). I used another brand at one time and cannot remember what it was, just Italian. Put the cream cheese out to get soft. I put it in a low, flat bottom dish and use a fork to blend in the powdered dressing mix. Use whatever bread you like and use a biscuit cutter, juice glass or what ever to cut circles the diameter of the cucumber. Soften butter. Spread a very thin smear of butter on the bread on one side. Put the cream cheese mix on one buttered circle. Put a thin, very thin slice of European/English cucumber and place another circle of buttered bread with butter next to cucumber. I never make the cucumber thick, but that is your choice. Only put a thin smear on the bread.
My friend who catered weddings made me promise to never give anyone this recipe. That was about 40 years ago and she is not in wedding or catering business, so I think it is okay to give this out. People have begged me for this recipe and this is the first time I have relented. People have begged me for this recipe, promising me they would keep the secret.
I am hesitating to post this. I asked Tommy and he said it would not be dishonest. My friend and I had a falling out a few years back, but I still kept the secret. I hope you do not think I am dishonest.

Your delicious cucumber sandwiches have made me want to try making a cucumber sandwich, you made them sound so good. The problem is I would have to slice them, and make the sandwich, and eat the sandwich outside of the house. I have tried cucumbers several times, and with the right salad ingredients and good salad dressing, I like a few thin slices, but I haven't ever had them at home. Even the scent of them nauseates my husband terribly. I started dating him when we teenagers, and even way back then even the scent of them nauseated him. It is not that he just doesn't like the smell of them, he starts to feel sick at his stomach. He used to get heart burn occasionally ever since he was real young, before I knew him. Now he takes medicine for GERD every day. I think there is something in his body chemistry that causes his dislike of cucumbers.
ReplyDeleteI had never had heartburn , nor had my Mom or Dad as far as I know, but the first time I ever ate dinner with my husband's family I had an attack of it. It hurt so bad where my heart is and I was so sick, I actually thought it was a heart attack, but didn't know how that was possible, because I was only 17 years old, and not fat or anything. I was scared, but not scared enough to wake up my Mom and Dad. 10:00 pm was "lights out" and I wasn't even allowed to turn a light on when I got home from a date. My husband's mother was a wonderful cook and had made an authentic Italian meal, with a big salad, and garlic bread, and even though my husband and I weren't old enough to buy wine, we had it it with that dinner. Red wine. Not the Mogen David that my Mom would let me have on holidays (mixed with 7 up). His Mom's Italian dinner was so delicious and of course had quite a bit of garlic in it, which was something I had never had before that. My Mom didn't cook with garlic, my Dad never would eat anything with garlic in it and Mom didn't much like it either. My Mom seasoned things with onions, black pepper, sage, and salt. I believe that the red wine and lots of garlic was such a shock to my stomach since I had never had it before, that my stomach just really rebelled. I
very seldom have heartburn now, if I do, it is usually if I take prednisone. I treat it with chewing gum, if that doesn't help, I drink some milk, if that doesn't work, Tum's do. If those don't work I will finally take omeprazole, as a last resort.
My husband doesn't eat water melon either because he says they smell similar to cucumbers to him. When my kids were little we would leave their Dad in the house and we would go outside and eat our slices of watermelon in the shade, have seed spitting contests, and rinse our faces, arms and hands off under the outside faucet, and put the peels in the garbage can before we came in.
Enjoy your cooling cucumber sandwich. It sounds like a perfect snack during these first few days of June.

DeleteThat all sounds like allergies and pretty bad allergies. The smell of regular cucumbers makes me ill, too. But, I don't see anything to remind me of watermelon.
Having to wash watermelon off before going inside where he is definitely sounds like he has allergies.
I find nothing cooling about the cucumber sandwiches, but I do love them. I was shocked teens found them so delicious.
Your parents were very strict about "lights out." I never had heartburn until I was pregnant and ate food at in-laws. I actually thought I was dying, too. It was scary being so young and far away from home where people did not care.

I'm a little confused. Are you referring to English cucumbers? I've never heard it called European cucumbers before. Those sandwiches are the best! I haven't had any in years, but you make me want to eat some soon.

DeleteI don't think your friend can be mad at you for posting a recipe that can be found anywhere- packet dressing mix and cream cheese? Yes, it's delicious but hardly a trade secret. I say English cucumber and we often have these open faced on the little rye bread squares. I have a funny story from my in-laws combined 50th bday/30th wedding anniversary party. My SIL made trays and trays of these for the party, but forgot them. We were young and dumb but knew more food was needed, so bought cheese whiz and squirted on triscuits. Not a nice make ahead appetizer. Her poor husband had to eat those cucumber sandwiches for days and they got soggy of course. To this day, he turns when he sees them out and has told her to never expect him to eat one again.

That is a funny story. I just can imagine how they tasted days later. Since I have never had one that was more than a few hours old, I really would not want one days old. Cheeze Whiz on Triscuits is gross even fresh...lol.
I love the tiny rye bread with Bleu cheese. We ate that as snacks as a kid. I was thinking about getting some the other day and wondered how expensive the memory would be.
Oh, butter on the bread keeps the sandwiches from turning soggy for a bit, long enough to serve the sandwiches.
I have eaten cucumber sandwiches all my life, usually at bridal showers and things like that. I do not think you are dishonest because you gave out a recipe.

DeleteMy promise was forever, I suppose. But, she wanted to protect her business which she no longer has. It has been so many years and her many betrayals of me does not excuse me giving it out except for the fact it is no longer her livelihood.
If I go out to Tea the cucumber sandwiches are my favorite part of the sandwich portion of the tea.
ReplyDeleteHere we get small cucumbers that are very much like the English variety only smaller....about the size of a dill pickle. They are often called Persian, Mediterranean or Israeli cucumbers. They do not store well. Their thin skins get wet from the inside. I suppose that is why the English ones are sold wrapped tightly in plastic wrap. I have also seen Armenian cucumbers. They are a light green and are very curved.
They are good. I had to finally hide a few for my friend when I brought them to her house. They went so fast that she could never get one.

The recipe for the cream cheese and Ranch dressing on bread with cucumber slices has been published on the Taste of Home website, so I doubt your friend could accuse only you of "spilling the beans". My mother just used margarine --- maybe we couldn't afford cream cheese? I think cream cheese and ranch dressing would have added a great deal to Mama's cucumber sandwiches,but apparently someone who gave her the recipe left " that part" out!! Hmmmm.
