While I have not tried this recipe, I put it here to save it. When I can get more zucchini, I will make this casserole. I think I would slice the zucchini a bit thicker and the potato thinner. I might alter the sauce. It is a video and has sound, so beware when you open it.
The recipe certainly calls for a mandoline, but I am so terrified I will not use the one I bought years ago. Do you use a mandoline? Are you afraid of it? I have gloves that help prevent cuts, but I am still afraid.
Wednesday, the other pork butt came out of the crockpot and straight into the freezer--eight servings. Tommy picked the meat from fat. There was not much fat, so the rest is liquid turning solid in the crockpot. My friend picked up both bones and the fat for her dog. So, nothing went in trash. The liquid/fat in crockpot still sits. No, he said he removed the liquid.
The first pork butt was either eaten on Monday and Tuesday or frozen. I forgot what, but two packages of meat are thawing in the refrigerator. Tommy is afraid we will get too much meat in the freezer. He wants me to quit buying it...lol.
Thursday, I will share my newly acquired seed packets with Lynda. Unfortunately, I only have two duplicates. I might even open the packets that I only have one in order to share those with her. Can I grow a pumpkin in a flower pot?
We had ground beef for dinner. Tommy had sweet potato, and corn. I had slaw and corn. Since I bought two bags of cole slaw mix, the second bag will be made for Thursday or Friday night. We may want to finish the lettuce/salad mix first.
Are you a fearless mandoline user?
I will use a mandolin - just have to be careful. They are super sharp - but they sure make it easy to slice a lot of things.

Be sure to use the guard and watch what you ae doing. It sure saves time. I have a Mueller chopper too and it is perfectly safe to use.

I don't use a mandolin simply because I do not have one. It would make slicing veggies much easier. As to growing pumpkins--no, you cannot grow a pumpkin in a flower pot. They grow on running vines on the ground and need a lot of room to spread.

I use a mandolin if I have a lot to slice. So many times though a really sharp knife is just easier. I am careful when I use the mandolin and have never used gloves. I just leave the last 1/2 inch uncut and it works fine.

I am Breenlantern, in that my husband's nick name for me was "Clamity" and like Annie, I always leave the last half inch or so uncut.
ReplyDeleteMy nick name comes from the fact I could not cook it seems without a burn, a cut, a broken dish, a mess in the oven or something burned. I cooked all the time but always seemed to manage to have some kind of clamity. The mandolin, I have one, I use it but only when I want to make the perfect dish for a guest or potluck. Other than that, I just use a good sharp knife and take my time to get good cuts. The thing that really scares me is the counter top meat slicer. It was always my husband's job, I have only used it a handful of times in the past ten years since he passed. Some how I just can not get rid of it because he loved that thing.
That does look like a good receipe, I saw one the other day that used zucchini, potatoes and a ham layer covered in a cheese sauce. Kind of like a lasagna of the ingriedents, squash, potato, sauce, ham in the middle, then squash, potato and sauce. Looked beautiful when served.
I found a small head of cabbage this week. Planning on slaw, red beans(pinto), barbecued chicken, cornbread or dinner rolls for this weekend. It will last 2 or 3 days. I don't mind leftovers.

Are like "Mayhem" on the insurance ads? LOL I am glad you are still whole. I want a meat slicer but would hurt myself or never use it out of fear. Tommy would use it but not be careful.
When I was thinking about making this recipe, I thought about two cups of tiny ham pieces would make it a complete meal. I thought about stacking it, too. So, I suppose I was on the right track.
Your dinner sounds good. I would want navy beans. I not only don;t mind leftovers, I love them and like you, I plan for them.

ReplyDeleteYes I am "mayhem" a lot of times. I get it in my mind I can do certain things, like plumbing. There has been many a time I have had water shooting everywhere. At least I have learned by trying things.
I like navy beans too! When I cook the pintos, make a good amount and I freeze the extra to use in other ways.
Oh, okay, I catch on now. Breenlatern is a guy, but that is not self-evident by the name. I think chicken would be good, but I am thinking of cheddar cheese. I don't know why ham sounds so good. I will certainly let you know.

Somehow, I just don't like pinto and kidney beans. But, when I cook navy, Great Northern, or blackeyed peas, I do freeze them in portions. I have some dried limas I need to try.
The recipe looks interesting. Let us know how it turns out. All that cream is a bit much for me.
ReplyDeleteI would love a mandoline, but I am afraid I would slice all my fingertips off. I would have to have those special gloves and the plastic pushing device, plus a safety box for the mandoline blades. And a helmet, probably.
It's safer for me to just stick with a knife, I guess.

DeleteI have the pusher and special gloves. I still think I will slice off my fingerprints. A helmet might be a good idea. Tommy slices the cucumber when the sandwiches because he makes more even slices.
I will use something else besides the cream. It does look too much for me.

DeleteI have several mandolins. I even travel with one in the camper! I find it much more convenient and easier to clean than the food processor. I do have a reputation for cutting myself with a knife but have never cut myself with a mandolin.
