Easy Easter Salad Recipe and Eye Appointment

This salad can be for anything, not just Easter. I often make it for company. But, I will not touch it. 

can green/English peas, well drained
diced cheese, I use cheddar
diced tomatoes or grape tomatoes cut in half
Tablespoon of Miracle Whip or Mayonaisse 

Put all in a serving bowl and stir, chill or not, serve. Use more or less dressing or another kind of dressing if you prefer. This is always eaten. 

I hate peas and have found I am allergic to peas. So, this is just an easy dish for company. I dice the cheese, but you could as easily buy diced cheese. I always make this the day of the meal. It is best that way.  However, it is not so complex that you even have to think. A sous chef who is ten-years-old can probably make this, but maybe not opening a can or dicing. Don't overstir and mush the peas. You can even mix other three ingredients and add peas last.

From my oral surgery, I had hydrocodone pills left, five. So, I took one Wednesday  night and slept from 10:30 pm  until 8 am or so on Wednesday. Don't worry, I only have four more, so there is no danger from opiod addiction. 

Thursday morning, I went for eye exam and a medical eye appointment. My vision has barely changed. But, I am getting new lens since I can tell I do not see as well. And, I am to wear sunglasses outdoors and avoid uv light as in bulbs for the sake of my macula, I think. Now, I have an appointment with a Retina specialist. Oh, there are no changes in my eyes due to diabetes. I am thankful for that.

I could not go and look at frames because of covid. Two other people were ahead of me. Since I did not want to just sit, we came home. I can buy frames anywhere. 

I may not have mentioned it, but I had a little swollen place near the inner corner of my eye on the top lid. It interfered with my vision at its largest. The doctor said a year ago that it was a sty. Nothing seemed to help. Well, as soon as I got the medical eye appointment, it started getting smaller. The doctor said it was hard to diagnose when he could not see it. When he stretched my eyelid, he said he could see something. So, that is that, except for the fact it has receded before and then become larger.  

Even though I had the glasses inserts after having my eyes dilated, the sun was too bright on the ride home. 

Now that the second covid vaccine is in sight I am going to make appointments that I have postponed for a year. I have two lined up already.

While I was in Cullman, I found out that someone I have known for a long time, but not well had a stroke, is blind in one eye, and had to move in with his mother. That is sad as he was about 20 years younger than I. Hopefully, he recovers and can resume life. But, I suppose going bling after a stroke means he will not recover his eyesight. 

Dinner is in the oven--meatloaf in bell pepper and cooked in tomato sauce with diced tomato. Tommy will have peas and tomatoes. I will have a bit of salad greens.

  2. I have to say I am not a fan of peas.....in any way, shape, or form. Don't know why and I like most all foods, except peas!

  3. That salad sounds good to me. I like peas too. I'm glad your diabetic eye exam came out well too. That is good that diabetes hasn't done any damage to your eyes

      I make it for others because it is so easy. Yes, I was worried about my eyes. I think the bare curly light Tommy uses beside him is what causes me not to be able to see it since I face it.

    2. I like English peas as a hot vegetable, especially the early small kind, but that salad does not appeal to me at all. I would not eat it voluntarily. Now your meatloaf dinner would really hit the spot!

  4. Hubby likes peas with cheese and mayo as a salad. I've diced ham up in it. It's not my favorite but I will eat it. I prefer my peas in a cream sauce with potatoes (don't need to be new potatoes) or in stir fried rice.

  5. I never buy peas but I just made some vegetable beef soup and added a bag of frozen veggies that included them so I will eat them. Funny but a favorite blogger of mine (sustainablecooks.com)today had a recipe for pea salad- she used frozen peas though and some onions, almonds and water chestnuts. It sounded interesting. She has a lot of air fryer and instant pot recipes on her blog. Also- an abundance of ads LOL. I did make a new dessert today- Greek custard pie. I halved the recipe and made it in a small springform pan I had here and of course, I had a sliver. The bad things was I had to stir the custard for over 20 minutes standing at the stove top- TOO LONG! I doubt if I make it again but I can say I did once.

      I could never stand and stir for 20 minutes. I suppose it is time for peas in the spring. They are pretty and springy.

  6. It does not sound particularly apPEAling. See what I did there? LOL

    My mother made a pea salad, but I remember it being vinegar-y instead of creamy and I'm sure it had diced onions. I didn't care for it either. Yours may be easier if you use already shredded cheese instead of dicing it.

  7. I never liked canned peas so never cooked them. When my son was little my neighbour looked after him while I went to work and one day I asked what he had had for lunch and he said "hamburger, fries and little round green balls"! I knew then I had not foist my dislikes on my kids!

      That is cute. My daughter when she was 30 or more was serving peas in a salad and i asked her to dip my helping out before she put in the peas. She asked why and I told her I could not stand peas. She was shocked and commented that we had them all the time when she was growing up. She was surprised I would serve them and did not like them. I tried not to turn them against things I did not like--beets and cantaloupe.

      That is the beauty of cooking, you can make it your own by changing a recipe. I have no idea about taste with anything since I have never tasted this salad. However, I can imagine any number of personal tastes can enjoy this different ways.

  9. We have English Pea Salad at every holiday gathering at the request of my son-in-law. I finely chop celery, diced sweet onions, sweet pickle relish, grated cheese, canned English peas & Mayo. Have been making this for 20 or so years!
    On the subject of peas, I learned this little saying or rhyme 50+ years ago:
    I eat my peas with honey,
    I’ve done it all my life.
    I know it may sound funny,
    But it keeps them on my knife!
    Funny how you can remember silly little things!

  12. The salad does sound like something I would try. I am not cooking this Easter after all that has happened in the last week I just don't have it in me. My mother in law said we can come over and pick up plates to take home if we want but she is having a few of her friends over to play cards and eat. They have all had both covid shots but are still careful. We will see. Not really in to mood to hang out with people yet. Take care and Happy Easter.
