Salad Soup

We bought two Fresh Express American Salads this past week because it was on sale for $3 each. Of course, we went to the food giveaway and received another four bags. And, a friend gave me her salad. So, I have more salad than we can eat without it going bad. I told Tommy that we were going to have salad soup! He said, "Well, I hope you can put some beans or meat or something in it to make it a little more." I laughed.

The American Salad Blend has iceberg, Romaine, carrots, red cabbage, and radishes. We also got two carrots that I think will go into the pot along with a couple of potatoes we received. We also were given 4 carrots and 4 potatoes last week. Of course, that was the week I bought 4 pounds of carrots! And, I have potatoes left from two weeks ago.

I received another box of huge stuffing mushrooms. I am going to cook the mushrooms and maybe freeze them or just stop the deterioration and store them in the refrigerator. I certainly don't want them to go to waste. We received two Roma tomatoes and four bananas.

I received a package of huge turkey tenders, two packages of ground beef, and a pork loin, and chicken/onion/pepper on skewers. This is more than enough meat for two people for a week.

Tommy went into Publix to get the last day of sales. Everything but apples were reduced. Wednesday starts a new sale week. He took a list. Even though my apples were not on the list, he remembered, called me and got apples. He bought--toilet paper, Kleenex, cherries, 2 Chunk Medium Cheddar Kraft cheese, a bell pepper, two apples, 3 Dasani water.

I never buy Kleenex, but my nose is running like a faucet. Cherries finally came down where I felt like they were affordable, but still expensive. I needed the bell pepper for the meat loaf I want to make.

About the list, after the cleaner picked up clothing, I cannot find the black and navy-blue dress I wear to color my hair. I actually thought it was hanging in the closet! So, I suppose I will find a tank top or the rattiest of my nightgown and wear that for color and trimming of bangs.

So, those are the plans today--salad soup, meatloaf, hair color, bangs trim. Leftovers are for dinner. It is 6:30 pm, so I need to get busy. I have not been lazy today, just did other things.

Tommy took out 3 packages of chicken--two chicken breast packages and one package of thighs--from the freezer. I will cook these and the packages of poultry from today so that I can freeze it. A little pepper and garlic powder leave these capable of being seasoned with other spices when we use it later.

Have you ever had salad soup? Of course, I am being silly by calling it "salad soup." What would you put in with five bags of salad?

So, five bags of salad go into a pot for salad soup.

  1. Calling it salad soup is not silly--that's exactly what it is! Do you have a blender or immersion stick blender? Because I would simmer the salad with stock, and then puree it to make a creamy vegetable base. You could then add any protein you wanted; chickpeas, beans, chicken, etc. Here's a recipe that looks good to me: https://fussfreeflavours.com/recipe-left-over-salad-soup/

    1. Sue,
I don't have a blender or immersion stick blender. I did have a blender. That sounds good.

  2. What a great box of food! A huge blessing.

  3. If we had 5 bags of salad, we would be eating salad every meal until it was gone, whether we want it or not. Cheeseburger salad is great, so is Cobb salad, or a southwest chicken salad

    1. Anne,
Exactly! I had a huge salad tonight along with the rest of the stuffed mushrooms. Tommy did not want salad, but he is eating the squash and zucchini and the ground beef he cooked.

  4. May I ask where do you get all the free food? Do others know about this where you live that might benefit? It's good healthy stuff. I've never had cooked lettuce. That's new to me, but I'd gladly eat salad multiple meals.

    1. We get it from a place advertised on TV, and of course, lots of people know. It is healthy stuff. One time, we got little healthy stuff, just seven bags/loaves of breads and two can of food. We don't complain since there are days like today. Sometimes there are cakes and cookies, candy and chips. I convinced Tommy to give most of that away. No, I am not against salad at all for many days. Mostly, Tommy likes lots of salads.

  5. Is this a weekly give away ? It is very generous as well as very healthy. Our area is nothing like that (darn) and is always income related.

    1. Connie,
It is twice weekly if a person wants to go twice. We only went once, and they told us to come twice a week. The week it is only cookies, pastries, and bread is disappointing. But, it is free, so who could complain. lol. I was surprised this was not means tested. But, my income would be low enough.

  6. Never heard of salad soup & not sure I'd care for cooked lettuce myself, but perhaps if you blended it all together it wouldn't be bad....? You'll have to let us know! You could also make different types of salad each day & not get bored of them, I love all salads!! You & Tommy are going to turn into bunnies after eating all this
    salad haha :)

    1. Bri,
I just made up that title for the post. Of course, that is what we will call it now. I would not get bored with the same salad. Tommy would. I know, we are going to have to grow ears.

    1. Kim,
When I had chickens I had no problem with any kind of extra food going to waste. I let my chickens turn it into eggs.

  8. The Chinese often cook lettuce in their soups and people in the US often cut romaine with the root base intact, and grill it. I like the idea of cooking it and then taking an immersion blender to it to make into a vegetable stock. One could add other vegetables if available and eat as is or add a meat, such as chicken. I think the idea sounds quite appealing. (I do like salad, but cannot eat a lot of greens due to medicine I take, so only have 1 or 2 small salads a week) Ranee (MN)

    1. Rae,
So, this does not seem so strange now. I figure is kale can be eaten in a salad or cooked, so can Romaine. I wish I had an immersion blender! I could eat a salad every day, but cannot eat much fiber because of gastroparesis. I love green everything except green peas because I am allergic.

  9. It sounds like stone soup but with more vegetables.
