Tommy has always loved the garlic herb butter pat that comes with some vegetables. So, I decided to make some for him. I read the label to see what was in the butter concoction. I had no idea the measures or proportions, so I guessed.
I was in no mood to dice garlic, so I used garlic powder. Next time, I will use both. Of course, you may put in herbs you prefer.
Garlic Herb Butter
1/2 cup salted butter
1/2 tsp Garlic
1/2 tsp parsley
1/2 tsp basil
1/2 tsp oregano
1/2 tsp chive
1/2 tsp onion powder
1/2 tsp garlic powder
3 shakes black pepper
I placed all this in a bowl and mixed with a spoon, using the back of the spoon. I kept the concoction on the counter in a covered bowl. He eats it on cold bread. I would toast a roll or bread spread with the butter mix. Of course, any herb or spice can be added or eliminated.
Saturday was hard. First, I had not had enough sleep. So, what else is new. Second, it was so hot. We went to Publix for cereal bogo, a2milk, and the participate in their tasting event. Tommy kept turning down different items. I had to remind him to take it and give it to me...lol. We had a taste of ice cream I certainly loved. It was Publix ice cream, lemon and blueberry.
We brought the milk and something else back to the house. He brought us a sandwich back to the car. I devoured my half immediately. I have no idea why I left home without eating anything!
Then, at Lowe's no one knew anything. All I wanted was the right fertilizer for blueberries. A customer told me loudly that I needed to google that, and she started to do it. I told here the guys were my google. Eventually, I had to leave the greenhouse because it was too hot for me. I was feeling sick from the heat. A manager never came for something else I needed. I had Tommy drive close so I could get right into the car, not drive across the parking lot to him.
Then, we changed phones to another service. The guy got my photos from this present phone. That has been holding up this change of phone service. In all this, I searched for a bicycle cable lock for the grill, tank to attached it to the house. No luck.
We went to the house in Bessemer that has the wonderful tomatoes--$4 for two tomatoes. Great price.
Finally, we came home and I managed to cool off. The heat was brutal. I took a nap from 6-8 pm. Of course, this is just a Southern summer, nothing more than usual. It is just my age and health, I know. I reveled in the extreme heat all my life, and now???

I didn’t get out in the heat today other than take a bag of garbage outside, but it was early and not too hot yet. I have to go out in it on Tuesday and am not looking forward to it. Your garlic butter sounds delicious. I would enjoy that too.

DeleteI just went in stores and out until I was in the Lowe's nursery section. It was just too much for me. It is my age and health! Staying in unless for short trip like yours. It is delicious. But, I think it is flexible.
As of today the temps are going down a little and the humidity a lot. I am thankful. The butter sounds tasty

thanks for sharing the recipe. The salmon fillets I like to buy have an "herb butter" on them and it's the ones the store is always out of, so I've been thinking to find my own herb butter to make and this sounds perfect. Then I can just buy plain salmon fillets.

ReplyDeleteHowever, I must caution everyone: if you plan to keep the herb butter on the counter, DO NOT USE FRESH GARLIC. I quote:
"Research performed by the University of Georgia confirmed that mixtures of garlic in oil stored at room temperature are at risk for the development of botulism. Garlic in oil should be made fresh and stored in the refrigerator at 40 °F or lower for no more than 7 days."
Now, butter is not oil. But it is high-fat and, at room temperature, can provide an anaerobic environment in which botulism can develop.
If you always refrigerate your herb butter made with fresh garlic, that's fine.
But fresh garlic in butter stored at room temperature? NO!! Use only the powdered garlic.
Lemon and blueberry ice cream sounds dreamy! Lemon and strawberry would be good, too. I used to like only chocolate, but as I age I find I prefer fruit flavors instead. Unless it's PB & chocolate.
You and Tommy don't make coffee at home, right? Too bad, because coffee grounds are the perfect natural fertilizer for blueberries. I would go to a DD or Starbucks drive-through and ask them to save you a couple pounds worth of used grounds in a container.
It is only 67 degrees (and sunny) here right now!! OMG, this cold, fresh air is such a treat. All my doors/windows are wide open. Pure bliss, I tell you!
I knew that about butter, but did not think of it when I contemplated using fresh garlic. Tommy would prefer it to be on the counter, so no fresh garlic.

I still like chocolate best. But, I will experiment with samples. I need to make some lemon curd for blueberries.

Linda, I made your herb butter yesterday and tried it today on a piece of homemade toasted bread. OMG--SO GOOD!! It is beyond delicious. It will make my Keto bread a real treat. I wish I still could eat pasta because that herb butter would be divine on a plateful of spaghetti.
DeleteI did have to substitute Italian seasoning for the basil and oregano, but it worked fine. The garlic powder tasted great--no worries about fresh. It will keep longer with garlic powder, anyway.

DeleteGlad you liked it. I am quite sure subs can be made and it would still be great. He liked the dabs of commercial so well, that I had to try it. I think that some spaghetti sauce on the buttered bread would be terrific!
yes yes yes to herbed butter. I plan on making some when I am home. I have heaps of herbs and softening the butter is not a problem here. After mixing I hope to use some jolly ice cube trays to harden them.

DeleteThe butter on the counter sometimes is a bit stiff. It is the ac. I leave the herb butter on the counter since I only make a half stick at a time. Are you using your novelty ice trays. In the fall you could make skeleton butters.
I was about to make a comment similar to what Sue said. Fresh garlic is fine if you are going to use it immediately or if you are freezing it. I use to have some little silicone forms to make holiday themed shaped butter. I think I may still have some in the back of one of my lower cabinets. I bought some a couple of years ago for a granddaughter who had married and would be entertaining in her own home. She was my best butter pat maker and she was also my pie baking buddy. Her sister baked Christmas cookies with me.
ReplyDeleteBack to the herb butter. ....my sister makes the most amazing garlic bread! She uses fresh garlic, parsley, and grated Parmesan cheese. Add a sprinkle of paprika and you are set to go!
I leave butter on the kitchen island counter all year-round. Yes, at this time of year it can sometimes be messy if I am not using the air-conditioner. Let's face it, no one wants to try to spread cold butter unless you have a HOT from the oven dinner roll.

Tommy loves garlic bread. Do you have her recipe or should I just try to make it?
Tommy puts butter on a split roll or bread and microwaves it. I cannot imagine how tough that must be. Times like that call for a little toaster oven on the counter.
My sister's recipe is pretty much what I wrote earlier. You look at how many slices of garlic bread you want. You eyeball your butter and put the appropriate amount in a small bowl. Now either mince, chop or run through a press the amount of garlic that suits you. At my house we are team heavy garlic! We add some chopped parsley, either curly or Italian, use what ever you have! Now you can add some parmesan or any cheese you like. We go with a light amount of parm. After all we are making GARLIC bread, not cheese bread. Spread it on the bread as thickly as you like and if it looks a bit pale sprinkle it with a touch of paprika.

Remind me, did you buy an air fryer? or was that an instant pot that you purchased? What Tommy needs for garlic bread is either an air fryer or a toaster oven. Actually they are very similar. My camper toaster oven is actually a convection oven which is the big advantage touted for the air fryer.
My friend Tommy's, garlic bread will NEVER be perfect as long as he is using the microwave. He needs a toaster oven!
I have both types of air fryers. Rack or Basket. Rack works best for me but at times I use the basket one. It depends on what you are cooking!

DeleteI can manage that. He gave me a taste of his microwaved bread. I could barely gnaw a bite off. I had an air fryer but it broke after two uses. Well, I believe he broke it when he washed it and knocked off part of the latch. So, it would never close again, even after I put the piece back on the basket.
My heart is set on the EmirilLegasse360, or somethinglike that. It has doors that open outwards. Looks great. But, I would settle for lesser. Never had an instant pot and have not wanted one.
His bread is never good to me...lol.
But, a small toaster oven would probably suffice
DeleteYou could also put the buttered bread on a foil-line baking sheet and run it under the broiler for a minute or two to toast it. No fuss, no muss, no cleanup.

My DD heats bread (that won't fit in the toaster) in the microwave, too. It is beyond perplexing. But at least they aren't trying to make US eat it that way! :^) :^)
